Ingredients
  

  • 1 medium Ripe avocado Should be slightly soft to the touch.
  • 1 large Egg For poaching.

Instructions
 

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork, adding a pinch of salt and a squeeze of lemon juice.
  • Fill a small pot with water and bring it to a gentle simmer. Add a splash of vinegar. Crack the egg into a small bowl.
  • Create a gentle whirlpool in the water and slide the egg into the center. Cook for about 3-4 minutes until the whites are set and the yolk is runny. Remove with a slotted spoon and drain on a paper towel.
  • Toast the bread until golden brown and crispy. Let it cool slightly.
  • Spread the mashed avocado evenly over the toasted bread. Top with the poached egg, and season with salt and pepper. Add any optional toppings as desired.
