Ingredients

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cottage cheese, sugar, egg, vegetable oil, and vanilla extract. Whisk until well blended.
  • In a separate bowl, mix all-purpose flour, baking powder, baking soda, and salt. Stir until evenly combined.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the blueberries.
  • Prepare your muffin tin by greasing it or using muffin liners. Fill each muffin cup about two-thirds full with batter.
  • Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
