Ingredients
  

  • 2 cups Cooked rice Day-old rice works best as it’s drier and prevents clumping.
  • 1 cup Chicken breast Cut into small, bite-sized pieces. Boneless, skinless thighs can be used for more flavor.
  • 1 cup Mixed vegetables Common choices include peas, carrots, and bell peppers. Fresh or frozen both work well.
  • 2 tablespoons Soy sauce Adds a savory depth to the dish. Low-sodium soy sauce can be used for a healthier option.
  • 1 tablespoon Sesame oil Gives a nutty flavor that enhances the overall taste.
  • 2 cloves Garlic Minced for a fragrant kick.
  • 2 stalks Green onions Chopped, for garnish and added freshness.
  • to taste Salt and pepper To taste, ensuring the dish is well-seasoned.
  • 1 large Egg Optional, scrambled into the rice for extra protein and richness.

Instructions
 

  • Prepare all ingredients: chop chicken, wash and chop vegetables, mince garlic, and chop green onions.
  • Heat a large skillet or wok over medium-high heat. Add a splash of oil and cook the chicken for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  • In the same pan, add more oil if needed, then add minced garlic and stir for 30 seconds until fragrant. Add mixed vegetables and stir-fry for 3-5 minutes until tender but crisp.
  • Add cooked rice to the pan, breaking up any clumps. Return the cooked chicken to the pan and mix everything together. Stir-fry for another 2-3 minutes.
  • Pour in soy sauce and sesame oil, stirring well to coat all ingredients. Adjust seasoning with salt and pepper. If using, scramble the egg in the pan and mix it into the rice.
  • Garnish with chopped green onions before serving. Enjoy your Chicken Fried Rice!
