Ingredients
  

  • 1 pound Boneless, skinless chicken breast Main protein source.
  • 1 cup Cottage cheese Preferably low-fat or full-fat.
  • 1/2 cup BBQ sauce Choose your favorite brand or homemade.
  • 1 tablespoon Olive oil For cooking the chicken.
  • to taste Salt and pepper For seasoning the chicken.
  • 1 cup Fresh vegetables Optional, such as diced bell peppers, corn, or cherry tomatoes.
  • 1/4 cup Fresh herbs Optional, like chopped cilantro or parsley for garnish.
  • 1 cup Grains Optional, such as cooked quinoa or brown rice.

Instructions
 

  • Rinse the chicken breasts under cold water and pat dry with a paper towel. Trim any excess fat and season both sides with salt and pepper.
  • If using store-bought BBQ sauce, skip this step. Otherwise, mix 1/2 cup of BBQ sauce with 1 tablespoon of honey in a small bowl for sweetness.
  • Heat a skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the seasoned chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
  • Assemble the bowl by starting with a scoop of cottage cheese as the base, adding sliced chicken on top, and drizzling with BBQ sauce. Add fresh vegetables and grains if desired, and garnish with fresh herbs.
