Ingredients
  

  • 2 cups Cooked chicken Shredded or diced, rotisserie chicken works well.
  • 1 cup Uncooked long-grain white rice This will cook in the casserole.
  • 1 can Cream of chicken soup Adds creaminess and flavor.
  • 1 cup Sour cream For extra creaminess.
  • 1 cup Chicken broth Helps cook the rice and adds flavor.
  • 1 cup Shredded cheese Cheddar or mozzarella for topping.
  • 1/2 cup Frozen mixed vegetables Optional, adds color and nutrition.
  • 1 teaspoon Garlic powder Enhances flavor.
  • to taste Salt and pepper For seasoning.

Instructions
 

  • Prep the chicken by shredding or dicing it into bite-sized pieces.
  • Cook the rice in a medium saucepan with 2 cups of water and a pinch of salt for 15-20 minutes until tender.
  • In a large mixing bowl, combine cream of chicken soup, sour cream, and chicken broth. Stir until smooth, then add garlic powder, salt, and pepper.
  • Combine cooked chicken, cooked rice, and creamy sauce in a large bowl. If using, add frozen mixed vegetables and stir gently.
  • Preheat the oven to 350°F (175°C). Transfer the mixture to a greased 9x13 inch baking dish and top with shredded cheese.
  • Bake for 25-30 minutes until the cheese is bubbly and golden. Let cool for a few minutes before serving.
