Ingredients
  

Pasta

  • 8 ounces Fettuccine or linguine Choose your favorite type of pasta.

Shrimp

  • 1 pound Large shrimp Peeled and deveined, fresh or frozen.

Sauce Ingredients

  • 4-5 cloves Garlic Minced for aromatic flavor.
  • 1/2 cup Sun-dried tomatoes Chopped, adds sweetness and tang.
  • 2 cups Fresh spinach Adds color and nutrition.
  • 1 cup Heavy cream For a rich, creamy texture.
  • 1/2 cup Parmesan cheese Grated, adds savory depth.
  • 2 tablespoons Olive oil For sautéing shrimp and garlic.

Seasoning

  • to taste Salt For seasoning.
  • to taste Black pepper For seasoning.

Garnish

  • 1 handful Fresh basil Chopped, for garnish and added flavor.

Instructions
 

  • Prep all ingredients: rinse shrimp, mince garlic, chop sun-dried tomatoes, wash spinach, grate Parmesan, and chop basil.
  • In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and reserve 1 cup of pasta water.
  • In a large skillet, heat olive oil over medium heat. Add shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add sun-dried tomatoes and cook for another minute.
  • Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted. Adjust sauce consistency with reserved pasta water as needed. Season with salt and pepper.
  • Add cooked pasta to the skillet and toss to coat. Fold in sautéed shrimp and fresh spinach until spinach wilts. Garnish with chopped basil.

Notes
