Ingredients
  

  • 4 oz Dark chocolate Use high-quality dark chocolate with at least 60% cocoa content.
  • 1/2 cup Unsalted butter At room temperature for easy mixing.
  • 1/2 cup Granulated sugar Sweetens the batter and helps create a tender texture.
  • 2 large Eggs Provide structure and stability.
  • 2 tablespoons All-purpose flour Just a small amount to bind the ingredients.
  • 1 teaspoon Vanilla extract Enhances the overall flavor.
  • 1/4 teaspoon Salt Balances sweetness and enhances chocolate flavor.
  • 1 teaspoon Espresso powder Optional, intensifies the chocolate flavor.
  • 1/4 cup Chocolate chips Optional, for an extra gooey center.

Instructions
 

  • Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust lightly with flour.
  • In a microwave-safe bowl, combine dark chocolate and unsalted butter. Heat in 30-second intervals, stirring in between, until melted and smooth. Let cool slightly.
  • In a separate bowl, whisk together granulated sugar, eggs, and vanilla extract until light and fluffy. Fold in the melted chocolate mixture.
  • Sift in the all-purpose flour, salt, and espresso powder (if using). Gently fold until just combined.
  • Divide the batter evenly among the prepared ramekins, filling each about three-quarters full. If desired, add a few chocolate chips in the center of each ramekin.
  • Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is soft.
  • Let the cakes cool for 1 minute, then carefully run a knife around the edges and invert onto plates. Dust with powdered sugar and serve immediately.

Notes

These lava cakes are best served warm, with a scoop of ice cream or a dollop of whipped cream for an extra treat.
