Ingredients
  

  • 4 pieces Bone-in, skin-on chicken thighs or breasts The skin adds flavor and helps keep the meat juicy.
  • 1.5 pounds Baby potatoes, halved These cook quickly and absorb the delicious marinade.
  • 3 tablespoons Olive oil Helps to crisp the chicken skin and roast the potatoes perfectly.
  • 1/4 cup Fresh lemon juice Adds a bright, zesty flavor that enhances the dish.
  • 4 cloves Garlic, minced Brings a wonderful aroma and depth to the meal.
  • 2 tablespoons Fresh rosemary, chopped Complements the lemon and chicken beautifully.

Instructions
 

  • Rinse the chicken under cold water and pat dry with paper towels.
  • In a large bowl, combine olive oil, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Mix well.
  • Add the chicken to the marinade, ensuring each piece is coated evenly. Cover and marinate in the refrigerator for at least 30 minutes.
  • Preheat your oven to 400°F (200°C).
  • Prepare the potatoes and any vegetables by cutting them into bite-sized pieces and tossing with olive oil, salt, and pepper.
  • In a large oven-safe skillet, arrange the marinated chicken pieces and scatter the seasoned potatoes and vegetables around them.
  • Pour any remaining marinade over the chicken and vegetables.
  • Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  • Remove from the oven and let the dish rest for a few minutes before serving.
