Ingredients
  

Seafood

  • 1 pound Shrimp Peeled and deveined.
  • 1 cup Crab meat Lump or imitation.
  • 1 cup Scallops Fresh or frozen.
  • 1 cup Calamari Sliced.

Vegetables

  • 1 cup Celery Diced.
  • 1 cup Cucumber Sliced or diced.
  • 1/2 cup Red onion Finely chopped.
  • 1 cup Bell peppers Diced, any color.
  • 1 cup Cherry tomatoes Halved.

Herbs

  • 1/4 cup Dill Chopped.
  • 1/4 cup Parsley Chopped.
  • 2 tablespoons Chives Chopped.

Dressing

  • 1/4 cup Olive oil Extra virgin for richness.
  • 2 tablespoons Lemon juice Freshly squeezed for brightness.
  • 1/4 cup Mayonnaise For creaminess.
  • 1 teaspoon Dijon mustard For a kick.
  • to taste Salt To taste.
  • to taste Pepper To taste.

Instructions
 

  • Gather all your ingredients, including seafood, vegetables, herbs, and dressing ingredients.
  • Prepare the seafood by peeling and deveining shrimp, rinsing scallops, and thawing frozen seafood if necessary. Cook the seafood by boiling, steaming, or grilling until cooked through, about 2-4 minutes per type. Let cool.
  • In a bowl, mix olive oil, lemon juice, mayonnaise, and Dijon mustard. Whisk until smooth and creamy. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooked seafood, diced vegetables, and chopped herbs. Pour the dressing over the mixture and gently toss to combine.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  • Before serving, give the salad a gentle stir and transfer to a serving dish. Garnish with extra herbs or lemon wedges if desired.
