Ingredients
  

  • 2 medium Sweet potatoes Peeled and diced into small cubes for even cooking.
  • 1 can (15 oz) Black beans Rinsed and drained to reduce sodium content.
  • 1 small Onion Chopped finely to add sweetness and depth of flavor.
  • 1 medium Bell pepper Diced (any color works) for a pop of color and crunch.
  • 2 cloves Garlic Minced to enhance the overall taste.
  • 1 teaspoon Cumin For a warm, earthy flavor that complements the sweet potatoes.
  • 1 teaspoon Paprika Adds a smoky touch to the dish.
  • Salt to taste Salt Enhances the flavors of all ingredients.
  • Pepper to taste Pepper Enhances the flavors of all ingredients.
  • 2 tablespoons Olive oil For sautéing the vegetables and adding healthy fats.
  • 1/4 cup Fresh cilantro Chopped, for garnish and a fresh finish.

Instructions
 

  • Peel and dice the sweet potatoes into small cubes, about half an inch in size. Place in a bowl and drizzle with olive oil, tossing gently to coat.
  • Rinse the canned black beans under cold water in a colander to remove excess sodium. Set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sautéing for 3-4 minutes until soft. Add minced garlic and cook for another minute.
  • Add the sweet potatoes to the skillet, stirring to combine with the onions and peppers. Cover and cook for 10-15 minutes, stirring occasionally.
  • Once the sweet potatoes are tender, add the rinsed black beans, cumin, paprika, salt, and pepper. Mix well and cook for an additional 5 minutes.
  • Remove from heat and garnish with fresh cilantro. Serve warm.

Notes

This dish is versatile; feel free to add other vegetables or proteins to suit your taste.
