Ingredients
  

  • 14 ounces Firm or extra-firm tofu Drained and pressed to remove excess moisture.
  • 1 cup Bell peppers Sliced (red, yellow, or green).
  • 1 cup Broccoli florets Fresh or frozen.
  • 1 cup Carrots Julienned or sliced.
  • 1 cup Snap peas or snow peas Fresh or frozen.
  • 1 small Onion Sliced.
  • 2 tablespoons Vegetable oil or sesame oil For frying.

Teriyaki Sauce

  • 1/4 cup Soy sauce For the teriyaki sauce.
  • 2 tablespoons Honey or maple syrup For sweetness.
  • 1 tablespoon Rice vinegar Adds tanginess.
  • 1 teaspoon Sesame oil For flavor.
  • 1 tablespoon Cornstarch Mixed with 2 tablespoons of water for thickening.

Garnishes

  • to taste Sesame seeds For topping.
  • to taste Chopped green onions For garnish.
  • to taste Cilantro For garnish.

Instructions
 

  • Prepare the tofu by draining and pressing it to remove excess moisture. Cut into 1-inch cubes.
  • Chop the vegetables into uniform sizes for even cooking.
  • In a small bowl, mix together soy sauce, honey or maple syrup, rice vinegar, sesame oil, and cornstarch mixed with water to create the teriyaki sauce.
  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes until golden brown and crispy. Remove from skillet and set aside.
  • In the same skillet, add another tablespoon of oil if needed. Stir-fry the chopped vegetables for 3-5 minutes until tender yet crisp.
  • Return the cooked tofu to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and stir well to coat. Cook for an additional 2-3 minutes until heated through and sauce thickens.
  • Serve hot, garnished with sesame seeds, chopped green onions, and cilantro if desired.

Notes
