Ingredients
  

  • 2 medium Ripe tomatoes Choose juicy, red tomatoes for the best flavor.
  • 1 large Cucumber A crisp cucumber adds a refreshing crunch.
  • 1 medium Ripe avocado Look for a creamy avocado to enhance the texture.
  • 1/4 cup Red onion Thinly sliced for a hint of sharpness.
  • 1/4 cup Fresh cilantro Chopped for a burst of herbal flavor.
  • 1 medium Lime Juice of 1 lime adds a zesty kick.
  • 2 tablespoons Olive oil Extra virgin olive oil enhances the richness.

Instructions
 

  • Wash all vegetables thoroughly. Chop the tomatoes into bite-sized pieces.
  • Slice the cucumber. You can peel it if you prefer, but leaving the skin on adds extra crunch.
  • Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into cubes.
  • Thinly slice the red onion.
  • In a small bowl, squeeze the juice of one lime. Add olive oil, salt, and pepper. Whisk until well combined.
  • In a large mixing bowl, combine the chopped tomatoes, cucumber slices, avocado cubes, and red onion.
  • Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  • Add the chopped cilantro and give the salad one last gentle toss. Taste and adjust seasoning if needed.
